Courage & Conviction is the flagship American single malt from Virginia Distillery Co., named for the founder's maxim to have the courage of your convictions. It is made entirely from malted barley and matured for a minimum of five years at the distillery below the Blue Ridge Mountains.
Signature Malt is a marriage of three cask types, targeting roughly half ex-bourbon, a quarter sherry and a quarter cuvée wine casks. Those cuvée casks are the distinctive part, a re-toasted and re-charred profile developed by the late Dr Jim Swan and used by only a handful of distilleries anywhere.
Caramel and butterscotch lead, then the palate opens into bright red fruit and raspberry with cocoa, barrel spice and vanilla behind. The finish is creamy and smooth, and the whole thing makes a good starting point for anyone working out what American single malt tastes like.
