Clos Cibonne's Cuvée Tradition is a category of one — a Côtes de Provence rosé built around the rare Tibouren grape (around 90%, with 10% Grenache) that has been championed by the estate since the 1930s. Clos Cibonne is one of only 18 Crus Classés of Provence, and its vines sit on clay-limestone soils in the foothills of the Maures mountains, just 800 metres from the Mediterranean.
Pale salmon in the glass, the wine opens on lifted aromas of tangerine peel, wild strawberry, rose petal, lychee and sweet spice, carried by a savoury, briny thread that hints at the sea. The palate is texturally complex and saline, with real structure underneath the floral fruit.
After native-yeast fermentation in steel, the wine is racked into 120-plus-year-old foudres and aged a full year sous-voile — left partially open to develop a protective flor layer, similar to Jura or Sherry. The result is a rosé unlike any other, built to age gracefully for a decade or more.
