Cantillon Nath is a rhubarb lambic from Brasserie Cantillon, the family-run traditional lambic brewery established in Anderlecht, Brussels in 1900. As with everything Cantillon makes, it begins as spontaneously fermented lambic, cooled overnight in an open coolship and aged in old oak casks. It is an occasional, limited release named after Nathalie Van Roy, wife of brewer Jean Van Roy, for whom rhubarb lambic is a favourite.
Fresh-cut rhubarb is macerated in roughly two-year-old lambic, then the beer is left to referment naturally in the bottle. In some years the rhubarb lambic is racked into freshly emptied raspberry tanks before bottling, adding a subtle extra layer of fruit.
It drinks dry, tart and zesty, the green, tangy snap of rhubarb playing against an acidic, oaky and funky lambic base. Crisp and refreshing rather than sweet, it is a fine example of Cantillon's fruit work.
