Cantillon Gueuze is a traditional Belgian oude gueuze from Brasserie Cantillon, the family-run lambic brewery founded in 1900 in Anderlecht, Brussels. The brewery still works from its original building, which also houses the Brussels Gueuze Museum, and produces only lambic using fully spontaneous fermentation: unboiled wort is left to cool overnight in a shallow copper coolship in the attic, where wild yeasts and bacteria from the Brussels air set fermentation going.
Gueuze is made by blending young and older oak-aged lambics. The residual sugars in the young lambic trigger a natural second fermentation in the bottle, giving the beer its fine sparkle with no added sugar or yeast. It is sometimes called Brussels Champagne for exactly that reason.
Expect a bone-dry, bracingly tart beer with a lively mousse and aromas of citrus, green apple, oak, hay and the signature barnyard funk of wild yeast. The finish is long, lemony and refreshing, and like all Cantillon beers it is certified organic.
