In the heart of the Calvados Domfrontais Appellation d' Origine Controllee AOC area, a small farm has been producing calvados for three generations. It has a rustic, country look and smell because it is made with at least one-third pears and apples for the balance. Definitely for the locals. No compromises...meaning it's completely genuine, but it's also fruitier and rounder when young than Pays d'Auge Calvados that need to be aged longer. It's also known for its apple and pear cider, which must be 100 percent pure juice by law, as must all French ciders or Perry, and no addition of anything other than sulphite under stringent conditions is allowed. This is crucial to remember because in most areas throughout the world, ciders can contain up to 45 percent water, as well as sugar, synthetic or natural aromatics, sugar, alcohol, preservatives, and other additives.
