Callington Mill Distillery sits within the restored heritage precinct surrounding the historic Callington Mill windmill in Oatlands, in the heart of Tasmania's Midlands. Here the team distils and matures single malt whisky in a cool highland climate that has a strong influence on how the spirit develops in cask.
Enigma brings together two of the world's great fortified wine traditions, maturing in ex-sherry oak casks from Jerez de la Frontera in Spain and ex-port oak casks from Portugal's Douro Valley. The casks are first fill and filled while still wet and freshly decanted, and the whisky enjoys full term ageing before being bottled at natural colour without chill filtration.
Golden in the glass, it opens with burnt orange, caramel and nutmeg alongside dried figs, marzipan and a hint of roasted tobacco. The palate is delicate and soft, layering raisins, sultanas and tropical fruit with touches of fresh strawberry, dry oak, spice and a gentle peppery edge. The finish is light and nuanced, with burnt orange and soft spice easing into a woody dryness.
