Drawn from the distillery's Appellations Collection, the whisky spends its long maturation in American white oak ex-Bourbon casks before being finished in Sauternes wine barriques sourced from esteemed Bordeaux estates. This final flourish lends a luscious, fruit driven character that sits beautifully alongside the gentle smoke.
On the nose, soft heathery peat weaves through honeycomb, vanilla and orchard fruits of white peach and apricot. The palate is rich and layered, with baked apple, green grape, candied ginger and warming cinnamon spice folded into concentrated honey. It closes long and decadent, all runny honey, butterscotch and a lingering thread of ginger.
