From Terre à Terre, the family-owned estate established by Xavier Bizot and Lucy Croser, working across the cool-climate Limestone Coast and Adelaide Hills. Their Crayères Vineyard was planted in 2004 in the heart of Wrattonbully, on a north-south limestone ridge sitting above natural caves that recall the chalk cellars of Champagne, where Xavier was raised. The site is farmed in a high-density, low-trellis style with classic terra rossa soils over ancient limestone.
100% Sauvignon Blanc from a close-spaced parcel within the Crayères Vineyard, treated with the seriousness usually reserved for fine white Bordeaux. Expect a complex, age-worthy wine with stone fruit, white florals, herbs and tropical notes, gliding across a silky, mineral-lifted palate with persistence, balance and quiet textural complexity.
Hand-picked at full ripeness, with the fruit fermented partly in older oak barrels and partly in stainless steel. Aged for around six months on full lees with no battonage, before light filtration and bottling.
