From Terre à Terre, the family estate of Xavier Bizot and Lucy Croser, working from their Crayères Vineyard in Wrattonbully. The site, planted in 2004 on a north-south limestone ridge under terra rossa topsoil, takes its name from the chalk cellars of Xavier's native Champagne.
A blend of around 65% Cabernet Sauvignon and 35% Shiraz, drawn from close-spaced (1.5m by 1.5m) plantings on the Crayères Vineyard's 37-million-year-old terra rossa ridge. The 2023 vintage was cool and wet, providing a perfect framework for fine, slow ripening. Expect a perfumed, classically Australian claret with cassis, liquorice, dark berry fruit, spice and a subtle peppery edge from the Shiraz, leading into a balanced, finely structured palate with chalky tannins and good cellaring potential.
Hand-picked, with each variety processed and fermented separately, then matured for 14 months in a combination of French oak barrels and large foudres before assembly and bottling.
