The latest creation from the team at L.A.S. Vino, this Chardonnay is crafted with hand-picked fruit that is cold-pressed as whole bunches. The grapes are sourced from three Margaret River vineyards located in Willyabrup, Metricup, and Treeton, featuring a blend of 90% Gin-Gin and 10% Clone 3. Fermentation and maturation take place in barriques (5% new), with partial malolactic fermentation and fortnightly lees stirring before blending and bottling.
Aromas of nutty nougat, wheaty notes, and honey evolve to include buttery hints with time in the glass. The palate is complex yet restrained, finishing medium-long and harmoniously. A superb, slightly lighter style compared to its single-vineyard counterparts.
