Gekkeikan is one of Japan's oldest sake breweries, founded in Fushimi, Kyoto in 1637. The Fushimi district sits over a renowned underground spring, and its soft, mineral-rich water has been the cornerstone of Gekkeikan's sake making for centuries. The brewery's name translates as "laurel crown", a nod to its long history of excellence in the craft.
This is the brewery's classic Junmai, made in the traditional style using only rice, water, koji and yeast, with no distilled alcohol added. The rice is polished to seventy per cent, and the brew is fermented slowly at low temperatures to preserve aromatic delicacy and clean structure.
The nose is bright and softly fruited, with notes of fresh apple, green banana and a touch of cream. The palate is light bodied and dry with gentle acidity, finishing crisp and clean. Versatile at the table, it can be enjoyed chilled, at room temperature or gently warmed, and pairs well with tempura, grilled chicken, simmered fish and other classic Japanese dishes.
