Horin sits at the top of Gekkeikan's range, a Junmai Daiginjo crafted in the brewery's historic Kyoto home of Fushimi. Gekkeikan was founded in 1637 and has long drawn on the soft, mineral-rich water of the Fushimi spring, the ingredient widely considered essential to the region's reputation for refined sake. Horin is brewed in the traditional Junmai style with no added distilled alcohol, using only premium rice, water, koji and yeast.
The premium grade is signalled by a low rice polishing ratio, with the outer layers of each grain milled away to leave only the starchy heart. Slow, cool fermentation and meticulous brewing then build the wine's elegance, and Horin sits in a bracket of award-winning ultra-premium sake.
The nose is gently fruited and floral, with notes of pear, green apple, melon, honeydew and a hint of honeysuckle. The palate is round and smooth with a creamy mid-weight body, lifted fruit, gentle acidity and a savoury umami note of mushroom and chestnut. The finish is long and silky. Best served lightly chilled in a wine glass to appreciate its delicate aromatics.
