El Jolgorio Pechuga Mezcal 750ml
A celebratory Mezcal. Unlike the other expressions in the El Jolgorio range, Pechuga is not named after the species/variety of Agave but rather by the way it is produced. Pechuga is produced from wild-harvest Espadín Agave, in honour of the Virgen de la Candelaria (Virgin of the Candelaria) in the village of Santiago Matatalan, Oaxaca. This expression is twice distilled in a copper pot stills with winter/Christmas season fruits such as tejocote, banana, passionfruit and wild apples. On the second distillation, the breast of a Guajolote (Creole turkey) is suspended above the liquid (never touching), inside the still and cooked with the steam generated from the distillation.
El Jolgorio is named for the celebrations that take place throughout the mountain villages of Oaxaca, Mexico. Mezcal is at the heart of these festivals, and El Jolgorio is a mezcal of tradition and significance. Representing the work of 16 families in 10 different regions of Oaxaca, El Jolgorio embodies their shared cultural connection while also highlighting the special story, and unique mezcal expression, of each place. Each batch may vary in profile depending on the harvest.
