Signature is Domaine Raoul Gautherin & Fils' village Chablis, and it is a very good introduction to what the estate does. The Gautherin family has been growing here since 1585, across fourteen generations, working from cellars in the town alongside some of the appellation's best known names.
The vineyards sit on the Kimmeridgian marl that defines Chablis, a seabed laid down well over a hundred million years ago and still packed with tiny fossilised oyster shells. In the pure Chablis tradition the wine is fermented in tank and then aged for ten to eleven months on fine lees, with the winemaking reassessed and adjusted every year to suit the vintage.
The style is clean, crisp and unmistakably Chablis. Lemon, green apple and white blossom are carried on a chalky, saline mineral core, the palate is dry and taut and the finish leaves you reaching for another mouthful. Serve it cold with oysters, seafood, or simply on its own.
