An older release of Les Nogers, the premier cru Blanc de Blancs that Adrien Dhondt draws from a parcel of old vines in the village of Cuis. The site lies on the same hillside as Le Bateau in Cramant, and the wine has been bottled under the lieu-dit name since 2012, when it took over from the estate's Vieilles Vignes Selectionnees cuvee.
With extended time on cork the profile shifts away from primary fruit and towards the savoury. Expect baked apple, quince, honey, toasted brioche, almond and a distinct note of struck flint, with the chalky core of the Cote des Blancs still holding everything upright. The mousse is fine and softened, the extra brut dosage leaving a long, dry, saline finish.
Champagne Dhondt-Grellet began in 1986 at Flavigny near Avize, when Eric Dhondt and Edith Grellet started bottling their own fruit. Adrien took over and was named Winemaker of the Year in the 2017 Trophees Champenois. This is a Champagne for the table rather than the aperitif: try it with roast chicken, richer seafood, mushrooms or hard cheese.
