Clos Cibonne is a historic Provençal estate near Toulon, owned and run by the Roux family since 1793 and classified as one of the 18 Cru Classés of Côtes de Provence. Under the stewardship of Brigitte Roux and her husband Claude Deforges — now with fifth-generation winemaker Olivier Deforges — the estate has been certified organic since the 2019 vintage, farming the rare Tibouren grape on vineyards just 800 metres from the Mediterranean, ringed by hillsides in a natural amphitheatre.
A rosé of 90% Tibouren and 10% Grenache (the latter a requirement of the appellation), drawn from the estate's oldest parcels of over 60-year-old organically farmed vines. Expect an unusually serious and age-worthy rosé with aromas of spring flowers, red berries, candied citrus, garrigue and sea spray. The palate is medium-bodied and textural, with fine acidity and a long, saline finish.
Hand-harvested, destemmed and direct-pressed, then fermented with indigenous yeasts in temperature-controlled stainless steel. The wine is then aged for a year in 120-year-old 5,000L foudres under a veil of 'fleurette' — a thin layer of yeast similar to the flor used in Sherry and some Jura wines — which gives it remarkable texture and longevity.
