This Vermouth di Torino, crafted according to the original recipe of Clemente Chazalettes from 1876, stands out with its captivating red wine base. Unlike most rossos that utilize white wine as a base, the Chazalettes Vermouth Rosso incorporates the Bava family's own Barbera wine, complemented by a touch of Nebbiolo. Roberto Bava explains that the interaction between the red wine and extracts yields a distinct reaction, as the tannins in the wine interact with the spices and bitterness, resulting in a unique evolution of flavors over time. The outcome is a Vermouth with a deeper hue and a more robust texture compared to contemporary varieties. The revived 1876 recipe incorporates Piemonte wormwood, as well as local herbs like marjoram and musk mallow, alongside exotic botanicals like sandalwood, mace, galangal, clary sage, cinchona bark, and coriander. Each botanical undergoes individual preparation, with maceration times ranging from a few days to several weeks.
