Callington Mill Distillery sits beside the historic Callington Mill windmill in Oatlands, in the heart of central Tasmania. The windmill was built in 1837 to serve local grain growers, and the distillery now shares that restored heritage precinct, producing single malt on large pot stills and maturing it almost entirely in casks sourced from Spanish and Portuguese fortified wine producers.
El Sol is the distillery's tribute to the sherry country of southern Spain. The whisky is matured in first-fill ex-sherry casks from Jerez that previously held a whole spectrum of styles, including Oloroso, Pedro Ximénez, Amontillado, Palo Cortado, Fino and Moscatel. Each cask contributes its own character, and the cool climate of the Tasmanian highlands lets that influence build slowly over time. It is bottled at natural colour and without chill filtration.
The nose is rich and smooth, with dried fruits, crème brûlée, coffee and dark chocolate. The palate is luscious and full-textured, carrying that sherried warmth through to a long, complex finish.
