Abasolo is a groundbreaking whisky from Mexico, made entirely from Cacahuazintle, an ancestral variety of corn cultivated for generations in the highlands around Jilotepec. The distillery takes its name from this town, long regarded as part of the heartland of corn in Mexico.
What sets Abasolo apart is its use of nixtamalisation, the ancient process traditionally used to prepare corn for tortillas and masa. This step, rarely seen in whisky making, unlocks a distinctive depth of flavour drawn purely from the grain.
The result is a bold, characterful whisky with aromas of roasted and toasted corn joined by hints of vanilla and leather. The palate carries warm notes of toffee, honey and cereal sweetness, offering a genuine taste of Mexican craft.
