100% Sangiovese IGT. From Chianti Classico but outside the appellation because no oak. Aged for 18 months in ceramic jars on lees. 23 years old vines from biodynamic and organic vineyards. Grown on limestone & schist at about 550m high.
The grapes are handpicked and selected to ensure an accurate degree of maturation and a healthy state with two picking dates on the 12th and 18th of October. Spontaneous Fermentation with pied de cuve. About 40% whole bunches, 1 month of infusion with few punchdowns. No fining, wide filtration.
