This top-drawer Bourgogne is drawn from two estate-owned sites in the southern reaches of Chassagne, near Chagny and Remigny. The soils are the classic clay and limestone of the Cote and the vine age is 35 years on average. The grapes were hand-picked and mostly destemmed before being naturally fermented and aged for 12 months on lees in a mix of steel vats and used large barrels. For structure and perfume, Pillot employs roughly 20-30% whole bunches for this wine—quite a surprising quantity for this level (until you taste the wine). If you love finesse and purity, do not hesitate.
