One parcel on the borderbetween Montmains & Foret and then the second one in Foret ie both straddle the line but he bottles bothtogether as 1er Cru Montmains. Character - Very straight, weight in the mouth. Tension, more intellectual. Lilian’sfavourite Cru, typicity of Chablis as he puts it. Pressed straight into tank, no pre ferment racking or setting, wildfermentation, malo finished in tank and left on lees for 6 months. Then transferred to barrel, 10% new, totalelevage of 12 to 18 months vintage dependant.
"The 2019 Chablis Montmains 1er Cru undergoes an extended élevage and was taken from tank. It has a complex, well-defined bouquet featuring notes of crushed limestone, yellow flowers and a touch of black currant leaf and oyster leaf. The palate is well balanced and certainly rich, delivering a smooth, honeyed texture and good weight. This is perhaps lower in acidity than the 2020, with a very harmonious finish. This will be fascinating to re-taste in bottle."
