'Labaya' (formerly 'Laya') is an old local name for an area within the appellation. The soils are deep, stony, sandy loam. Expect a richly aromatic Crozes with ripe black fruit, black olive, pepper, violet and savoury, meaty notes, leading into a full-bodied, fleshy palate with ripe acidity and balanced structure.\u003c\/p\u003e\u003cp\u003eHand-picked, sorted, crushed and fully de-stemmed before fermentation in open-top, temperature-controlled vats for around three weeks, with regular cap-punching and pump-overs.
