The site's gentle west-facing slope and clay-based soils are ideally suited to cool-climate Shiraz, with a unique clone whose origins remain unknown.\u003c\/p\u003e\u003cp\u003eA perfumed, medium-bodied, distinctly cool-climate style. Expect aromas of blue and black plum, violets, graphite, aniseed, licorice spice, cured meat and a whisper of smoky char, with a fruit-driven palate, faint oak seasoning and a subtle stalk grip.\u003c\/p\u003e\u003cp\u003eHand-harvested and sorted, with half the block fermented and matured in a 3,500L oak foudre (including a proportion of whole bunches), the balance in half-tonne open fermenters with twice-daily hand plunging.
