Max has nearly doubled the estate's holdings to around 20 hectares, farmed organically, with 87% planted to Riesling on Devonian slate soils.\u003c\/p\u003e\n\u003cp\u003eThe Saar Riesling Trocken 2022 is the estate's VDP. Gutswein entry-level dry Riesling, sourced mostly from the Oberemmeler Rosenberg, a site with good drainage ideally suited to this dry style.\u003c\/p\u003e\n\u003cp\u003eThe single-vineyard wines at von Hövel are matured in old Fuder barrels, and Max favours spontaneous fermentation with wild yeasts and extended lees contact across the range.
