The Pinot Noir vines average around 65 years of age and grow on Bathonian limestone with brown loam, the kind of soil that gives Volnay its famously perfumed, refined style.\u003c\/p\u003e\n\u003cp\u003eGrapes are hand-harvested and sorted in the vineyard and again at the winery, then mostly destemmed, with the proportion of whole bunches set by the vintage. A few days of cold maceration precede a temperature-controlled fermentation, and the wine is then aged for around 14 months in 228 litre barrels, roughly 30% new, before bottling according to the lunar calendar.\u003c\/p\u003e\n\u003cp\u003eThe nose offers violet, redcurrant, cherry and spice. On the palate it is fresh and lifted, with a gentle warmth on the finish. Serve it with lamb, game, red meats or a selection of cheeses.\u003c\/p\u003e\n\u003cp\u003eVincent Girardin established the house in 1980 from family roots in Santenay that reach back to the 17th century.
