The Chardonnay vines average around 45 years of age and grow on clay-limestone soils in one of the most celebrated white wine villages in Burgundy.

The grapes are hand-picked and sorted in the vineyard, pressed gently and lightly settled, then fermented in 228 litre French oak barrels, about 15% new, using indigenous yeasts and bacteria. The wine spends around 16 months on its fine lees with no lees stirring and is bottled according to the lunar calendar after a light fining and filtration.

The house regards this as one of the most mineral of its Côte de Beaune village wines. The palate combines good body with a pronounced mineral drive and a long, saline finish. Enjoy it with shellfish, langoustines, sole meunière or white meats.

Founded in 1980 by Vincent Girardin, whose family had tended vines in Santenay since the 17th century, the house is now based in Meursault. Winemaker Eric Germain, who joined in the early 2000s, has steered it towards a clear expression of each of Burgundy's great terroirs.

Vintages may vary.
