Fruit is hand-picked, whole-bunch pressed and wild-fermented in French oak barriques, then matured for around ten months on lees with a measured proportion of new wood, before further harmonisation in tank.\u003c\/p\u003e\n\u003cp\u003eThe 2024 was harvested unusually early after the warmest, earliest spring on record, but cool nights preserved tension and acidity.
