The site, planted in 2004 on a north-south limestone ridge under terra rossa topsoil, takes its name from the chalk cellars of Xavier's native Champagne.\u003c\/p\u003e\u003cp\u003eA reserve-level claret-style blend of Cabernet Sauvignon, Shiraz and Cabernet Franc from the close-spaced Crayères Vineyard, with the proportions adjusted vintage by vintage to capture the strengths of each season. Expect a deeply coloured, classically Australian red with blackberry, mulberry, plum, spice, graphite and floral lift, leading into a tightly focused, mineral-edged palate with a vast spread of fine, dusty tannins and a long, structured finish built to age.\u003c\/p\u003e\u003cp\u003eHand-picked, with each variety processed separately and fermented in open-top vessels with daily plunging or boards used to keep the cap submerged.
