The site, planted in 2004 on a north-south limestone ridge under terra rossa topsoil, takes its name from the chalk cellars of Xavier's native Champagne.\u003c\/p\u003e\u003cp\u003eA blend of around 65% Cabernet Sauvignon and 35% Shiraz, drawn from close-spaced (1.5m by 1.5m) plantings on the Crayères Vineyard's 37-million-year-old terra rossa ridge. The 2023 vintage was cool and wet, providing a perfect framework for fine, slow ripening.
