His grandson Robert started producing Champagne under his own name in 1928, working only with Chardonnay from grand cru terroir, and the house is run today by Pierre Amillet, the fourth generation of the family, farming around ten hectares on organic principles.\u003c\/p\u003e\n\u003cp\u003eFinished as an extra brut with minimal dosage, it is precise and refreshing. Citrus, green apple and white blossom lead, with fine patisserie and toasted almond notes from time on lees, a delicate mousse and a long, chalky, saline finish.
