Their Barolo Rocche di Castiglione comes from one of the most celebrated crus in the Castiglione Falletto area, a steep, south-facing slope at around 300 metres whose limestone and clay-rich marl soils are prized for producing perfumed, finely structured Barolo.\u003c\/p\u003e\n\u003cp\u003eThe family's small parcel is planted to mature Nebbiolo vines, farmed without chemicals. In the cellar, fermentation relies on indigenous yeasts in large wooden vats, followed by the very long submerged-cap macerations, often lasting two months or more, that are a hallmark of the house. The wine is then aged for several years in large, neutral French oak casks before bottling without fining or filtration.\u003c\/p\u003e\n\u003cp\u003eThe result is a Barolo of real elegance and depth, typically showing red cherry, rose petal, sour plum and forest floor, with notes of liquorice, tar and spice developing over time.
