The Sabre is a key Pinot Noir in the range, a barrel selection drawn from several vineyards chosen for their altitude, aspect and clonal mix.\u003c\/p\u003e\n\u003cp\u003eEach clone and site is kept separate through the winemaking, giving the Knappsteins a wide palette of parcels to blend from. The wine is matured in French oak, with a modest portion of new barrels reserved for the batches best suited to it, so the oak frames the fruit rather than dominating it.
