The rinds are steeped in white rum and then pot-distilled, while the fruit itself is separately infused in dark rum over several months. The two are blended together and rested in cask, using only real fruit rather than added flavourings.\u003c\/p\u003e\u003cp\u003eThe result is a rich and complex pineapple bouquet carried by smoky and clove-like notes, with a genuine, layered tropical-fruit character.
