His father established the estate in the 1970s and sold the grapes to the local cooperative until Pierrick, trained in oenology in Beaune, made his first vintage in 2010. Today the domaine farms sustainably, with cellars built into the hillside so that much of the work is done by gravity.\u003c\/p\u003e\u003cp\u003eIn 2019 Pierrick inherited vines from his father-in-law around the village of Courgis, including a small holding in Les Butteaux. This climat of the Premier Cru Montmains is one of the southernmost Premier Cru sites in Chablis, cooler and slightly later ripening, with a very thin layer of clay over Kimmeridgian marl. Yields from these vines are low, and unlike most of the estate's wines, this cuvée is aged entirely in barrel, a large share of them in larger formats.\u003c\/p\u003e\u003cp\u003eExpect citrus and orchard fruit layered over a fine mineral thread, with a rounded texture from its time in wood balanced by the bright, cool-site acidity typical of Butteaux.
