The vines are over sixty years old, the altitude keeps everything cool and slow to ripen, and the Savagnin is fermented and aged in 600 litre barrels, larger again than the format Girardin uses in Burgundy.\u003c\/p\u003e\u003cp\u003eThe aromatics are bright and tightly focused, with lime, quince and white flowers over a nutty, faintly smoky base. The palate is vibrant and saline, with low pH giving it a real edge of energy, a fine chalky texture through the middle and a long, dry, savoury finish.\u003c\/p\u003e\u003cp\u003ePierre Girardin founded his estate in Meursault in 2016 and is the thirteenth generation of a Burgundian winemaking family.
