He farms sustainably, is gradually introducing elements of biodynamics, and harvests relatively early to preserve freshness.\u003c\/p\u003e\n\u003cp\u003eAux Réas is a village-classified lieu-dit in Vosne-Romanée, one of the most celebrated communes in all of Burgundy, home to some of the world's most sought-after Grand Cru Pinot Noir. The vineyard sits on the southern side of the village, where it meets the boundary with Nuits-Saint-Georges.\u003c\/p\u003e\n\u003cp\u003eIn line with the domaine's approach to its reds, the fruit is largely destemmed and fermented with natural yeasts over at least two weeks, before maturation in barrels from the coopers Billon and Rousseau.
