The fruit is pressed relatively hard, fermented in barrel and left on lees with regular stirring, which builds the weight and depth that carry the wine without needing obvious oak flavour.\u003c\/p\u003e\u003cp\u003eThe nose is fragrant and precise, with lemon zest, white peach and dried apricot lifted by a delicate note of fennel, plus a little honey and mandarin. The palate is taut and mineral driven, with bright citrus, guava and kaffir lime leaf, an anise edge and a distinctive oyster shell salinity running to the finish.
