The house buys grapes after fermentation from a carefully selected list of growers across the Côte d'Or, working from village level up to the most celebrated Premier and Grand Cru sites. Production is intentionally small, rarely exceeding 100 barrels in total each vintage, often only one barrel of each cuvée.\u003c\/p\u003e\u003cp\u003eLes Grands Épenots is the upper, most prized portion of the Épenots climat in Pommard, giving wines of greater depth and finesse. The Pinot Noir is structured and brooding, with dark fruits, sweet spice, leather and undergrowth on a deeply concentrated palate framed by sleek, ripe tannins built for long cellaring.\u003c\/p\u003e\u003cp\u003eMounir's signature is an extended élevage on the lees with no racking, no fining and no filtration, in barrels that are typically 100% new oak from the Jupilles forest.
