The name nods to Mounir's time studying winemaking at a Trappist monastery in Lebanon. The house buys grapes after fermentation from a carefully selected list of growers across the Côte d'Or, working from village level up to the most celebrated Premier and Grand Cru sites. Production is intentionally small, rarely exceeding 100 barrels in total each vintage, often only one barrel of each cuvée.\u003c\/p\u003e\u003cp\u003eBonnes-Mares is one of Burgundy's great Grand Cru sites, straddling the border of Chambolle-Musigny and Morey-Saint-Denis. The wine combines the perfume of Chambolle with the structure of Morey: dark cherry, blackberry, rose petal, spice and earthy undergrowth on a deep, layered palate framed by fine, structured tannins built for long ageing.\u003c\/p\u003e\u003cp\u003eMounir's signature is an extended élevage on the lees with no racking, no fining and no filtration, in barrels that are typically 100% new oak from the Jupilles forest. Sulfur is added only minimally and late.
