The soils here carry fossilised oyster shells, and that marine influence shows up clearly in the glass as a saline, sea spray character that sets the wine apart.\u003c\/p\u003e\u003cp\u003eMade in the Burgundian fashion, the fruit is whole bunch pressed and fermented in French oak, then matured on lees to build texture. The oak is handled with restraint and works as a frame for the fruit rather than a flavour in its own right.\u003c\/p\u003e\u003cp\u003ePale straw in colour, the wine opens with white peach, nectarine and grapefruit alongside a nicely judged struck match note, then soft spice, white flowers, oatmeal, nougat and lemon curd. The palate is mealy and detailed, carrying citrus and stone fruit over flint, crushed river stone and oyster shell salinity. It flows long and pure, all tension and release, with real clarity and composition.
