Valeria Viganò and Luca Orsini left their careers as architects in Milan to take over the estate in 1991, and were early adopters of organic farming in the area. Every wine is made from their own hand-harvested fruit and fermented spontaneously with native yeasts.\u003c\/p\u003e\n\u003cp\u003eThis Chianti Classico is pure Sangiovese from the certified organic Le Cinciole vineyard, a south-east facing site at 430 to 500 metres on galestro, the crumbly clay and limestone schist prized in Chianti, over Pietraforte sandstone. After fermentation in cement, the wine spends 12 months in medium-sized French oak casks followed by a further year in cement before bottling.\u003c\/p\u003e\n\u003cp\u003eThe high-altitude site and gentle handling give a fresh, honest expression of Panzano Sangiovese, with sour cherry and red berry fruit, violet and subtle earthy, herbal notes.
