Fruit is drawn from the family's Gullyview and neighbouring Parish vineyards, including old vines planted in 1923 and 1973 on classic terra rossa soils of red clay over limestone.\u003c\/p\u003e\u003cp\u003eThis is Watervale Riesling with more texture and character than the regional norm - expect lime, grapefruit, wet slate and a lightly spicy, herbal edge, with a streak of saline minerality and bright, dry acidity driving a long, focused finish.\u003c\/p\u003e\u003cp\u003eHand-picked, with around 6 hours on skins in press, then wild-fermented in a mix of stainless steel and ceramic amphora for 2 months before ageing on fine lees in stainless steel.
