The fruit comes from the original 1973 plantings on the family vineyard at Watervale, on a south facing slope where only a thin layer of clay loam sits over solid limestone. That rock is the whole point of the wine.\u003c\/p\u003e\n\u003cp\u003eRather than the stainless steel and early bottling that defines most Clare Riesling, this is fermented and aged for around nine months in a thousand litre ceramic amphora, allowed to go through full malolactic fermentation, then racked to steel where it rests on fine lees for a further nine months. Damon and Maddy Koerner have made Koerner Wine's name on exactly this kind of transparent, low intervention approach since starting out in 2014.\u003c\/p\u003e\n\u003cp\u003eThe extended élevage builds a Riesling with real texture and breadth. Lime and grapefruit are joined by beeswax, dried herbs, ginger and a deep, chalky minerality, while the acidity is softened just enough to let the palate spread.
