His négociant label adds wines from carefully chosen old-vine parcels to the domaine's line-up, made with identical rigour.\u003c\/p\u003e\n\u003cp\u003eIn the cellar Fourrier favours purity over power. Fruit is sorted carefully and largely destemmed, fermented with native yeasts and extracted gently by hand, then raised in barrel with only a small share of new oak and minimal sulphur.
