The domaine works a small holding of just under 0.3 hectares here, planted around 1950, so production of this cuvée is very limited.\u003c\/p\u003e\u003cp\u003eOf the Pillot premier crus, Chenevottes leans towards the Puligny side of the family: citrus-driven and silky rather than broad, with lemon, white peach and fresh orchard fruit carried by fine, chalky minerality and a long, saline finish. It has the structure to reward a few years in the cellar.\u003c\/p\u003e\u003cp\u003eJean-Marc Pillot is the fourth generation of his family to tend vines in Chassagne-Montrachet and has run the domaine since 1991, now joined by his son Antonin, with the vineyards in conversion to organic farming. Whites are hand-harvested, fermented slowly in barrel with indigenous yeasts and aged on fine lees for around a year before a further spell in tank, using only a modest share of new oak so the site speaks clearly.\u003c\/p\u003e\u003cp\u003e\u003cem\u003eVintages may vary.
