Their vineyards are farmed organically with some biodynamic practices and picked by hand, and the wines are made without additions apart from a splash of sulphur at bottling.\u003c\/p\u003e\n\u003cp\u003eScary Gully is a windswept ridge in Forest Range at around 620 metres, one of the highest and most exposed vineyards in the Adelaide Hills. First planted in 1984, its shallow, rocky soils of light loamy clay over sandstone, full of schist and quartz rubble, keep yields naturally low and give the wine its trademark mineral edge.\u003c\/p\u003e\n\u003cp\u003eThe fruit is whole bunch pressed, settled overnight and racked to barrel for a wild ferment, then matured for around 11 months in a mix of French and Austrian oak, a modest share of it new.
