Their vineyards are farmed organically with some biodynamic practices and picked by hand, and the wines are made without additions apart from a splash of sulphur at bottling.\u003c\/p\u003e\n\u003cp\u003eThe Piccadilly Chardonnay is sourced from the St James Vineyard in the Piccadilly Valley, just below Mount Lofty. Planted in 1996 at around 525 metres on a south-east facing slope, it grows clones 76, 95 and I10V5 in light loamy clay over sandstone, with plenty of schist and quartz rubble through the soil.\u003c\/p\u003e\n\u003cp\u003eWhole bunches are pressed to tank and settled overnight, then the juice goes to barrel for a wild ferment and around 11 months in French oak, a modest share of it new, before a further rest in tank prior to bottling. Expect citrus, white peach and melon with hints of hazelnut and flint, a sense of weight balanced by fine acidity, and subtle oak in the background.\u003c\/p\u003e\n\u003cp\u003e\u003cem\u003eVintages may vary.
