They farm a handful of cool, elevated sites organically with some biodynamic practices, using cover crops, grazing animals and hand harvesting in the cool of the morning, and they make their wines with nothing added apart from a splash of sulphur at bottling.\u003c\/p\u003e\n\u003cp\u003eThe Monomeith Pinot Noir is drawn from a single vineyard owned by Patrick and Vienna O'Sullivan and farmed by Gentle Folk. Planted in 1996, the 1.33 hectare site sits at around 520 metres with both east and west facing slopes, and is planted entirely to Pinot Noir across clones MV6, 114, 115 and 777.\u003c\/p\u003e\n\u003cp\u003eIts soils of quartz rubble over siltstone, sandstone and clay are typical of the Mount Lofty Ranges and lend the wine a fine, savoury frame.
