He gave up herbicides for ploughing and uses green harvesting to restrain yields, and his cellar work is built on minimal intervention.\u003c\/p\u003e\n\u003cp\u003eGenavrières is fermented with a high proportion of whole bunches and extracted gently with pump-overs rather than heavy punch-downs, then aged in barrel with a measured amount of new oak.
